Ingredients

    1 1/4 c. Whole Wheat Flour
    1 tablespoon Baking Powder
    1/4 tsp Salt
    2 cup Post Raisin Bran Cereal
    1 cup Dannon fat free plain yogurt
    1/4 cup Silk, Unsweetened Soymilk
    1 medium Egg
    1 tablespoon Margarine
    1/2 cup Applesauce, unsweetened
    2 tsp cinnamon
    1/4 teaspoon ginger
    1/4 teaspoon nutmeg


Directions

Combine applesauce, egg, brownsugar, yogurt, soy milk, margarine in a mixer until smooth. Add in spices, baking powder. Add flour and raisin bran.

Preheat oven to 400 degrees.

Line muffin pan with paper liners or spray with nonstick cooking spray. Divide batter into cups.

Bake 20 minutes or until golden brown.

    not good.. author does not list brown sugar as ingredient but mentions it in directions.. i made it as listed and they are bitter, i used vanilla ff yogurt or they would have been inedible - 9/12/07
