Introduction

Actually, this is just a modification of another Spark recipe, Kickin' Creamy Chicken Stew. (My apologies to Aprildawn678!) We added loads of garlic and other veggies, used fat-free cream cheese (and more of it!), cut back on the chicken and spiced it up a bit. Number of Servings: 10

Ingredients

    3 chicken breasts, no skin
    3.5 cups black beans (2 cans, drained)
    1 small bag frozen corn
    1 large onion
    1/2 green bell pepper, diced
    2 stalks celery, trimmed and diced
    2 tbsp minced roasted garlic
    3 chipotle peppers w/ 3 tsp adobo sauce
    1 jar salsa verde
    1 can Rotel, or other diced tomatoes
    8 oz. fat free cream cheese

Directions

Spray Crockpot with cooking spray and lay chicken breasts on bottom. Add all other ingredients EXCEPT the cream cheese. Cook on low heat 6-8 hours or for 4-5 hours on high heat. Add cream cheese just before serving, or reserve if freezing and add to individual servings instead.

Serve drained in a tortilla, over rice or pasta, or serve as a soup.

Yields 10 appx. 3/4 cup servings
