Introduction

Ingredients

    3 cups grated potato, raw
    3/8 cup plain soymilk
    1 TB Ener-G egg replacement (mixed in 4 TB water)
    1/4 cup whole wheat flour
    1 whole grated onion, raw
    2 tsp salt
    2 dash pepper

    in skillet: TB olive oil & TB buttery spread

Directions

Mix all ingredients together. Drop by Tablespoon onto hot skillet (1 TB olive oil, 1 TB buttery spread) and press down with spatula to flatten. Cook 3-5 minutes on each side or until browned.

Serve with unsweetened applesauce.
