Ingredients

    8 SMOKED TURKEY SAUSAGE ( i USE JOHNSVILLE BRAND)
    4 MEDUIM POTATOES SLICED
    1 CUP ONION CHOPPED
    3 TBLSP LIGHT MARGARINE
    1/4 CUP FLOUR
    12 OZ CAN NONFAT EVAPORATED MILK
    1/2 CUP REDUCED FAT SHREDDED CHEESE
    SALT & PEPPER TO TASTE

Directions

preheat oven 350 degrees

slice sausage and saute with chopped onions in a heat pan sprayed with cooking spray set aside

peel and slice potatoes place in microwave bowel with water and cook until slightly tender

melt butter add flour cook for 2 minutes slowly add evaproated milk and stir until smooth and thick season with salt and pepper

assembel casserole

SPRAY CASSEROLE PAN WITH COOKING SPRAY LAYER POTATOES, SAUSAGE ONION, POTATOES SAUSAGE ONION, POTATOES SPRINKLE WITH CHEESE POUR WHITE SAUCE OVER AND COVER BAKE 20 MINUTES UNCOVER BAKER ADDITIONAL 10 MINUTES OR UNTIL HOT AND BUBBLY

    This was a good twist to our smoked sausage with red beans and rice. My husband and youngest son liked it, but my 14 year old son and 10 year old daughter tolerated it. I will make again and ad some more spices. - 11/13/08

    Be sure to slice the potatoes THIN. We sliced them and followed directions, but the potatoes didn't cook enough in the oven. Dish was still tasty though! - 9/26/08
