Ingredients

    12 ounces of asparagus (I used frozen)
    1 onion, chopped
    1 box of vegetable stock, low sodium preferred
    2 cloves garlic
    1 cup low fat buttermilk (low fat sour cream would be fine here )
    2 tbs whole wheat flour
    2 tbs olive oil
    Juice and zest of one lemon

Directions

Defrost frozen asparagus, and cut in chunks if it's not already - if you're using fresh, simmer til tender in vegetable stock

In a pot, saute onion til translicent and soft in olive oil - add flour and stir 2 minutes til flour is cooked but not browned... (white flour is acceptable to but i'm trying to be healthier)

Add aspragus, and stock... and cook until stock is thickened.

Add buttermilk or sour cream for more thickening and creaminess.

Using a blender ( a handy dandy stick mixer comes in handy and you don't hav eto clean the blender jar)

add lemon juice and zest... and serve.

Yogurt swirled in the top - is a nice garnish...
