Directions
Heat a wok, add the peppers, spring onions and carrots and stir fry for 3-4 mins, add the pineapple and stir then put to one side.
in small pan heat vinegar, orange zest, pineapple juice, tomato puree, Chinese spice powder and soy sauce. Mix the cornflour with 1 tbsp of water and add to the sauce, bring to the boil and cook until thickened, stir in sugar and pour over vegetables.
Add the noodles to the vegetables (once cooked) and stir and season.
