Ingredients

    2 Chicken breasts (boneless, skinless)
    2 cans chicken broth
    1 can Cream of Chicken soup
    1/2 pkge broccoli (frozen)
    1 can whole white potatoes
    1 c. white long grain rice

Directions

Mix broth and cream of chicken soup together and place in crockpot. Add seasonings to taste. Add frozen broccoli and whole chicken breasts. Cut potatoes into bite-size pieces and add to crockpot. Cover all ingredients with water until the fluid level is within 1 inch of the crockpot top. Cover and cook on low for 8 hours. Increase the temperature to high and add rice during the last 1/2 hour of cooking time.

Great low-calorie soup - very filling and satisfying on cold winter evenings, particularly to come home to a hot meal prepared! Take care to watch the sodium level in this dish, however - rinse the canned potatoes well, and use reduced-sodium broth when possible.

    There will be lots less salt if you use fresh potatoes and water instead of chicken broth, or 1/2 water and 1/2 low sodium broth. Also use low sodium cream of chicken soup. I would also use fresh broccoli. Wilma - 12/28/08
