Ingredients

    1 cup shredded carrots
    1 cup chopped onion
    1/2 cup chopped celery
    3 cups fat free canned chicken broth
    1 pound browned, crumbled ground turkey 93% lean
    2 cups cooked brown rice
    3 cups skim milk
    8 oz. cubed Velveeta light
    1 cup reduced fat sour cream


Directions

In a large saucepan bring carrots, onion, celery and broth to a boil; reduce heat and simmer 15 minutes or until veggies are tender. Add browned beef, cooked rice, cubed cheese and milk; simmer until cheese is melted(do not boil). Just before serving whisk in sour cream. 10 servings

    This was GREAT!! Tweeked the recipie. didnt use carrots or celery, instead 1/2 bag spinach. used lean hamburger meat and added jalapeno. didnt add the milk - its expensive and it turned out just fine w/o it; i feel it would have been too liquidy with the milk. i see this as being a thicker soup? - 1/31/12

    Very Good
    This was very easy and delicious. I melted the cheese with the chicken broth and veggies before I added the milk. It melted very quickly. - 4/1/10
