Ingredients

    2 (14.5 oz.) cans Italian-style diced tomatoes
    1 (19 ounce) can cannellini beans, drained and rinsed
    10 oz. fresh spinach - washed and chopped
    8 oz. penne pasta
    1/2 cup crumbled feta cheese

Directions

Cook the pasta in a large pot of boiled water until al dente.

Combine tomatoes and beans in a large non-stick skillet. Bring to a boil over medium high heat. Reduce heat, and simmer 10 minutes.

Add spinach to the sauce; cook for 2 minutes or until spinach wilts, stirring constantly.

Serve sauce over pasta and sprinkle with feta.

    I made this with 20 ounces of beans I cooked from dry and used spaghetti instead of penne pasta. Excellent recipe! It's easy and tasty. This recipe is especially no fuss because all the spices are already in the Italian style tomatoes. Yum. - 3/26/11

    My husband loved this dish, although he's not a feta fan & used Parmesan instead. I LOVED the feta! - 1/16/09
