Introduction
These turned out very yummy, beware of making them if you have portion control issues. I had to freeze them to not eat too many... For even lower calories and fat leave out the chocolate chips. 1 c. pumpkin
2 egg whites, whipped
3/4 c. brown sugar, packed
1 1/2 c. white whole wheat flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
dash of salt
1 tsp. vanilla
3 c. rolled oats
1/2 cup semi-sweet mini choc. chips (Enjoy Life allergy free)

Spray baking sheet with cooking spray. In a large bowl combine pumpkin, whipped egg whites, and vanilla. In a separate bowl combine brown sugar, flour, baking soda, cinnamon, nutmeg, cloves, salt, and oats. (Batter will be very dry at first--can add splash of nonfat milk or unsweetened almond milk to help if needed.)
Mix ingredients together just until moistened, then add chocolate chips. Drop cookies by tablespoonfuls onto prepared baking sheet, 2" apart. You can leave the cookies in the shape of a ball (the baked cookie will still be a ball) or flatten them out with the bottom of a glass before baking. Bake at 350 degrees for 15 minutes.
