Introduction

Simple soup to put together that is low in calories (116 per cup) and not salty like canned soups! Can substitute ground beef for more beans if you'd like to make it vegetarian. Ingredients

    1 1/2 c. carrot strips
    1 c. chopped celery
    1 (16 oz.) can pinto beans
    2 (8 oz.) cans tomato sauce
    2 c. water
    1 qt. tomatoes
    1 tsp. garlic powder
    1 tsp. salt
    2 tsp. dried parsley
    1/2 tsp. Italian seasoning
    1/2 tsp. oregano flakes
    1 tsp. cumin
    1/2 lb. ground beef, cooked and drained
    1 med. onion, chopped
    2 tsp. dried cilantro
    3/4 c. dry macaroni

Directions

Simmer all ingredients, except macaroni, 20 minutes or until carrots are tender. Cook macacroni and add to other ingredients. Heat and serve. Makes about 15 cups. Serving size is 1 cup.
