Ingredients

2 Chicken Drumstick, skin removed
4 Chicken Thighs, skin removed
4 Tbsp Curry powder
1 tsp Pepper, black
3 tsp Salt
2 tsp minced Garlic
1 medium Onion raw
.5 cup chopped Green Peppers
2 medium Potatos, raw
2 cups Swanson Chicken Broth 99% Fat Free
3 cups water
1 Tbsp. Cornstarch
Directions
Rinse chicken, pat dry and place in one layer in bowl or pan. Sprinkle with 2 TBSP Curry, 1 TSP Salt and Pepper, toss and set aside.
Wash vegetables. Chop potatoes, bell pepper and onion into 1 inch pieces.
In a large pot or pan add 1 cup chicken broth, 1 cup water, garlic and vegetables. Bring to a boil. Reduce heat and simmer for 10 minutes or until vegetables start to soften.
Return heat to high setting. Add remaining broth and 1 1/2 cups water, curry powder, salt and seasoned chicken. Bring liquid to a rolling boil. Reduce heat to medium-low and simmer covered, 30-45 minutes, until chicken is done. Mix cornstarch with remaining water. When chicken is done, bring mixture to a rolling boil and add water/cornstarch mixture, stirring until thickened.
Serve as is or over white rice (not included in calorie count).
