Introduction

A great low-cal substitute for chocolate cake made with Diet Pepsi (or Diet Coke). Topped with Cool Whip and strawberries. A great low-cal substitute for chocolate cake made with Diet Pepsi (or Diet Coke). Topped with Cool Whip and strawberries.

Ingredients

    -- Chocolate Cake mix (I used Betty Crocker SuperMoist Milk Chocolate
    -- 1 12 oz can Diet Pepsi (or Diet Coke)
    -- 1/2 package of Cool Whip Lite or Free
    -- 1 pint fresh Strawberries (sliced)

Directions

1. Preheat oven to 350*
2. Grease 9x13 pan.
3. Mix together cake mix and soda.
4. Pour into pan.
5. Bake for 25-35 minutes, or until inserted toothpick comes out clean.
6. Cool cake completely.
7. Top with whipped cream and sliced strawberries.
8. Enjoy!!

    I made 2 of these cakes for a work function and have never baked a cake in my life before - it was super easy and non-threatening, quick, and people LOVED it - even sought me out after the party to comment again on how great it was. Thanks so much for posting this! - 2/26/09

    I have made this for a few years. It can be made without a mixer. You have to use a whisk, and it takes a bit longer. Make sure the batter is thick. The texture is different due to the eggs and oil missing. The cake is delicious. - 8/29/09

    I made this with diet cherry vanilla dr. pepper and it gave it a slight cherry flavor and it was delicious without any topping at all. - 1/8/09

    This was so delicious and so easy. I used the dark chocolate cake mix and Diet Cherry Dr. Pepper although I don't think you could taste any cherry flavor at all after baking. It was delicious plain but I topped it with a tsp of Hershey's Lite chocolate syrup and lite cool whip and choc. sprinkles :) - 9/20/09

    This was amazing, this was amazing!! I made it in muffin tins so I would have portion control. A few times I drizzle ONLY a tbl of 50% less sugar chocolate syrup. Upped the calories by 30 - but hey - THIS WAS AMAZING! - 7/23/09
