Ingredients

    1 cup applesauce
    1 teaspoon canola oil
    1/2 cup sugar in the raw
    1teaspoon vanilla extract
    1/4 teaspoon almond extract
    3/4 cup oat flour
    1/3 cup unsweetened cocoa powder
    2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/8 teaspoon ground cinnamon
    1/2 cup semi-sweet chocolate chips

Directions

1. Preheat the oven to 350 degrees. Line muffin tin with paper muffin cups or coat with cooking spray.
2. Combine applesauce, canola oil, sugar and extracts in a small bowl. In a large bowl, whisk together the oat flour, cocoa, baking powder, baking soda, salt and cinnamon. Add applesauce mixture to flour mixture and stir until blended. Then stir in chocolate chips.
3. Working quickly, pour into muffin cups and bake for 20-22 minutes, rotating pan a half turn after 10 minutes. Muffins are done when the tops are firm to the touch.

Makes 8 muffins.

    Canola oil was not on the recipe when I made these. They are fantastic and moist. I also add extra chocolate chips! - 7/13/09
