Number of Servings: 16

Ingredients

    2-4 scoops whey protein powder or 2 tsp flour
    2 eggs
    4 egg whites OR 1/2 cup whites from carton
    4 cups fresh pumpkin baked and mashed ahead of time OR 2 16 oz cans canned pumpkin
    1/2 to 3/4 cup real maple syrup (to taste)

    2 tsp cinnamon
    1 tsp allspice
    1 tsp fresh grated nutmeg
    1 tsp ground ginger
    2 TB ammaretto
    2 tsp vanilla extract
    few drops of almond extract (optional)

    2 12oz cans non fat evaporated milk

    For pie crust use three sheets of Phillo (Fillo) with no spray or anything in between. Just layer the sheets across the pie plate in such a way that the whole plate is covered. Wonderful low fat way to make pie crust.

Directions

Combine all ingredients in either blender or mixer.

Pour into two crusts. (see ingredient notes for low fat suggestion)

Bake 15 minutes at 450
Reduce heat to 350 and bake 35-45 minutes

Cool before cutting.

Makes two pies. Each pie yeilds 8 slices.
