Ingredients

    1/4 cup butter
    1/4 cup Onion
    1/4 cup celery
    1/3 cup flour
    6 cups 1% Milk
    1 1/2 Cup Broccoli cut up
    1 1/2 cup cauliflower cut up
    2 cups Mashed Potatoes
    1 Cup Cheddar Cheese shredded

Directions

saute celery and onion in butter in big soup pot until tender, add flour to mixture until mixed. Slowly start pouring in milk and whisk together to get lumps out. Allow to simmer til it starts to warm up. Add broccoli and cauliflower and let it cook on med heat stirring occasionally until it starts to thicken. Add mashed potatoes and cheese. Cook another 10 minutes until veggies are tender and the soup is at desired thickness.
Serve with whole wheat buiscuts or bread if desired.
