Ingredients

2 Tbsp fresh parsley or 1 Tbsp dry
2 Tbsp olive oil
2 garlic cloves, minced
1 tsp salt
1/2 tsp pepper
3 1/2 lb butternut squash peeled and cut into cubes
1/4 cup grated parmesan cheese
Directions
1) In a large bowl combine parsley, oil, garlic, salt, pepper, and cheese. Add squash and toss to coat.
2) Transfer to an ungreased shallow baking dish. Bake, uncovered, at 400F for 50-55 minutes, until squash is tender
