I came across this recipe when my father whimsically stated 'why do they have lemon pie and line pie, but not orange pie?' - as it turns out, there is such a thing and it will now be a holiday standard in my house. It is a light, fresh pie that is easy to whip up and is more healthy than some of the typical holiday pies. I hope you enjoy it. Ingredients

3/4 c. sugar
1/4 c. cornstarch
1/2 tsp. salt
1 1/2 tsp. finely shredded orange peel
2 c. orange juice
2 eggs
2 tbsp. butter
Whipped cream (optional)
Directions
Bake pie crust at 450 degrees for 10 to 12 minutes and then cool.
In saucepan, combine sugar, cornstarch and salt. Gradually add orange juice. Cook and stir until bubbly. Reduce heat; cook and stir 2 minutes more. Remove from heat and allow bubbling to stop. Beat 2 eggs and add to mixture (if the eggs are added too soon, they will cook before they can be mixed in). Bring to gentle boil. Cook and stir 2 minutes more. Remove from heat. Stir in butter and peel. Pour into baked shell. Refrigerate. Best served with whipped cream.
