Introduction

Great fast breakfast, brunch or dinner dish. You can make ahead and freeze unbaked (increase baking time to 60 min if frozen). The egg, flour and cottage cheese are the binding ingredients. Ingredients

    6 eggs
    6T flour
    10 oz cottage cheese
    10 oz of spinach, cooked and drained
    2 c shredded cheddar cheese
    Cooking spray to grease pie plate

Directions

Whisk egg and flour. Add Cottage Cheese, Cheese, Spinach. Pour into greased (use PAM) glass pie plate. Bake for 40- 45 min. at 375. (You can add other veggies like zuchinni and/or meat substitute like Morning Star).
