Introduction

Ingredients

    Red Ripe Tomatoes, 1 cup, chopped or sliced
    Onions, raw, .5 cup, chopped
    Romaine Lettuce (salad), 0.5 cup, shredded
    Cilantro, fresh, 2 tbsp
    Lentils, .5 cup
    *Extra Virgin Olive Oil, .5 tbsp
    Lemon juice, 1 tsp
    Garlic, 2 cloves
    Mexican Cheese, .2 cup, shredded
    Tortilla chips, low fat (baked) 1 serving

Directions

Put lentils in bowl with olive oil. Microwave for 1 minute, then mash lentils with a fork. Chop onion, tomato, lettuce, and cilantro. Mix with lentils. Chop garlic and mix in. Add lemon juice and shredded cheese. Microwave for 1.5 minutes. Either crumble in tortilla chips to eat as a salad or use tortilla chips to scoop up the dip.

Makes around 2 servings.
