Ingredients

As I am restricting carbohydrates in my diet, I use the full-fat versions of these cheeses, but if you are not watching carbs, you may like to use the low-fat versions
Cream Cheese - 225gm / 8 oz
Cheddar Cheese - 1 cup, grated.
Then select your favourite seasoning - I used a pre-made garlic and herb seasoning mix. If you are watching your carbs, be aware that most 'shaker' seasonings are made with a rice flour base or similar. A teaspoon is a good amount to start with.
You could also use fresh herbs in this recipe, but I would not recommend adding freshly crushed garlic to your cream cheese.
Optional inclusions:
Roasted capsicum (bell peppers), diced finely
Toasted walnuts, crushed or finely chopped
Directions
Place cheeses and seasoning in a food processor and blend until smooth. Taste-test to check amount of seasoning - you may wish to add more if you are using a subtler spice than garlic.
Transfer to bowl and add any optional ingredients. Mix well.
Cover and place in refrigerator for a couple of hours to let the ingredients settle and flavour to develop.
Serve in a dipping bowl surrounded by chopped vegetables, or fill celery sticks with dip. To add a touch of class, sprinkle the top of the dip with toasted walnuts and add a sprig of parsley.
