Introduction

Ingredients

    500 g ground turkey
    3 cups cooked or canned black beans (liquid reserved)
    1 12oz can corn (drained)
    2 cloves garlic
    2 jalapeno peppers
    1 cup finely chopped celery (with leaves)
    1 lg onion chopped
    1/2 lg green pepper
    1 tbsp ground coriander
    2 tbsp ground cumin
    1 tpsp cayenne pepper
    salt and pepper to taste

    Mixed baby greens
    Chopped onion
    Diced tomatos
    Salsa
    Grated cheddar
    Sour cream
    Fresh chopped Cilantro

Directions

Brown ground turkey
Season with spices, salt and pepper
Add celery, onion and green pepper and saute until onions are translucent
Add corn and saute for 3-5 minutes.
Add black beans with 1/4 cup of the black bean liquid and heat through.

Serve over a large serving of mixed greens, chopped onions, chopped tomatos.

Garnish with salsa, grated cheese, sour cream and fresh chopped cilantro.

    Very Good
    This was really good but really "hot"! Will make again but add less cayenne pepper and jalapenos. I used 3/4 cup as a serving and got about 8. - 4/30/09

    Incredible!
    The adults really liked this, but alittle too spicy for the kids. Recommend leaving jalapeno out or cut it down if you have kids. - 4/8/09

    Very good. I served it with mixed salad greens, tomatoes, salsa, lite cheddar and strained yogurt. I couldn't eat the whole portion allowed. Makes more like 16 servings. Delicious!!! - 1/21/09
