Ingredients

1 1/4 c flour
1 1/4 c wholemeal pastry flour
1 tbsp baking powder
1 tbsp cinnamon
1/4 tsp salt
1/4 c sugar
1/2 c vegan margarine
3/4 c soymilk + 1 tsp cider vinegar
2 tbsp ground flax seed + 1/4 c water
3/4 c chocolate chips
Directions
Preheat oven to 400F/200C.
Sift dry ingredients into a large bowl and mix. Cut in margarine. Mix together soymilk mixture and flax mixture, then mix into dry ingredients until combined. Add chocolate chips and mix to incorporate.
Drop large handfuls of dough onto a lined baking sheet. Bake for 15-20 minutes.
