Introduction

Banana muffins with splenda, applesauce, and if you like, substitute whole wheat flour. Banana muffins with splenda, applesauce, and if you like, substitute whole wheat flour.

Ingredients

    2 eggs, beaten
    4 medium bananas, ripe, mashed
    4 oz unsweetened applesauce
    1 tsp vanilla
    2 cups all purpose flour
    3/4 cup (36 tsp) splenda
    1 tsp salt
    1 tsp cinnamon
    1 tsp baking soda
    6 tsp splenda brown sugar blend

Directions

Blend wet ingredients together. In separate bowl, blend together dry ingredients, and then combine with wet ingredients. Do not overstir. Pour into greased or lined muffin tin. Sprinkle with 1/2 tsp brown sugar on the top of each muffin. Bake at 350F for 20-25 minutes. Makes 12 muffins.

    O.K.
    I think I'm more sensitive to cinnamon that I thought - I typically don't eat anything with cinnamon in it but I though I could handle this. I'm sure it's great but I couldn't eat them. - 2/27/11
