My mother in law is from from Zambia, and her father is from India, so she was raised with very ethnic cooking, as was my husband; she gave me this recipe shortly after we were married. It is fabulous! Serve with roti or chapati bread. Ingredients

* Chicken Thigh, 8 thigh, bone and skin removed
* Olive Oil, 3 tbsp
* Onions, raw, 1 medium (2-1/2" dia)
* Garlic, .5 tsp
* Ginger Root, 1 tsp
* Curry powder, 4 tsp
* Potato, raw, 3 medium
* Canned Tomatoes, 1 can
* Salt, .5 tsp
* Water, tap, .5 cup (8 fl oz)
Directions
1. Place clean chicken pieces in large saucepan.
2. Add 3 tablespoons of cooking oil and cook.
3. When chicken is golden brown or slightly browned add chopped onions and cook until tender.
4. Add garlic and ginger; cook for 2-3 minutes.
5. Add 2 tsp curry powder; cook for 2-3 minutes; DO NOT BURN
6. Add the chopped tomatoes and salt to taste
7. Add 1/2 cup of water and leave to simmer for 20-30 minutes
8. After simmering, check the taste -- if you want to add the other 2 tsp of curry powder for taste, do so.
