Ingredients

1 Tbsp. Olive Oil
1 clove of Garlic, minced *
1 cup of Mushrooms ** (~1/3 pound), sliced (more or less for your preference)
3 cups of fresh Baby Spinach
* Garlic powder can be substituted, but add it just before you add the spinach
** any mushroom can be used, but the meaty taste of portobellos or creminis taste very nice with spinach
Directions
Heat a non-stick skillet over medium-high heat. When the pan hot, add the olive oil, garlic, and mushrooms.
Sautee the mushrooms, stirring occasionally, until just cooked through, about 5 minutes.
Add the spinach. Toss with the mushroom sautee until the spinach starts to wilt.
Serves 1 (but can be easily multiplied for many folks)
