    Eggplant, fresh, 1 eggplant, peeled (yield from 1-1/4
    Egg, fresh, 1 medium
    Instant, Quick, and Regular Oats Cereal, 1 cup
    Garlic, 3 cloves, minced
    Mushrooms, fresh, 2 cup, pieces or slices
    Onions, raw, 1 cup, chopped
    Zucchini, 1 cup, sliced
    *Del Monte Petite Cut Diced Tomatoes, 2 cup
    Paprika, 1.5 tsp
    Italian Seasoning, 3 tsp
    Salt, 1/3 tsp
    Olive Oil, 2 tsp
    Beef, round steak, 1/2 lb
    Parmesean Cheese
    *McCormick GrillMates Montreal Steak Seasoning, 3 Tbsp
    Garlic, 2 cloves, minced
    Frenchs Worcestershire Sauce, 1/4 Cup


Combine steak and marinade in ziploc bag. Refrigerate 30 mins. Peel eggplant and slice. Place on parchment paper with salt for 20 mins to get rid of excess water. Chop remaining veggies in bite size pieces. Crack egg into bowl, place oats in separate bowl. Dip pieces of effplant into egg and then oats until coated. Warm olive oil and fry eggpland until browned on both sides. About 10-12 mins. In a large frying pan cook steak, add garlic, and rest of chopped veggies and spices and cook until veggies are crisp tender. Lastly add chopped tomatoes. Simmer 2 mins. Layer eggplant this steak and veggie mixture to warm parmesean.
