Introduction

Wonderful salad for lunch or dinner or side. We make extgra of the vinaigrette and use it for other salads as well. Wonderful salad for lunch or dinner or side. We make extgra of the vinaigrette and use it for other salads as well.

Ingredients

    10 oz. fresh spinach
    1 large or 2 medi avocados, peeled and sliced.
    1.2 lb bacon, crisp-cooked, drained & crumbled
    1/2 walnut halves
    Vinaigrette:
    2 Tbsp cider vinegar
    1/4 olive oil
    1 tsp Dijon mustard
    Salt & Pepper

Directions

Tear spinach into bite-size pieced and place in salad bowl.
Arrange the avocado slices, crumbled bacon and walnuts over the spinach. Combine vinegar, olive oil, mustard and Salt & Pepper in a jar. Cover, shake virorously and pour over salad.
