Introduction

I found a banana cake recipe in a favorite book of mine but found it to be too many calories. I tweaked the recipe and cut half the fat, a third or so of the sugars and the family still loves it- even the teens. Ingredients

    1/4 c shortening
    1/4 applesauce
    1/2 c brown sugar, packed
    1/3 c sugar
    1 large egg
    2 egg whites
    1 c ripe banana, mashed
    1 tsp vanilla
    2 c flour
    1 tsp baking soda
    1 tsp salt
    1/2 c buttermilk


Directions

In a bowl, mix sugars and shortening together until creamed. Add egg, beat well then add egg whites, beat well. Beat in bananas then vanilla.
Sift flour, baking soda, and salt together and add to creamed mixture, alternating witht eh buttermilk.
Pour into a 9X13 pan sprayed with cooking spray. Bake at 350 for 30 minutes or until a toothpick inserted in center comes out clean.

    Incredible!
    I made this last night. I also used Splenda brown sugar blend (1/4 cup) and Splenda for baking instead of sugar since my husband is diabetic. I also used egg beaters instead of eggs. I was expecting it to taste more like a cake, but it was just like a more moist banana bread. I made it 12 servin - 4/8/10

    Very Good
    Really good - my kids loved it. I used Splenda brown sugar blend (1/4 c) instead of regular brown and egg beaters instead of regular egg to decrease calories even more. Cut into 15 generous pieces for only 3 Weight Watchers points each. - 4/5/09
