Ingredients

1 c. half and half
8 oz. unsweetened chocolate
2 T. butter
2 c. raisins, finely chopped in food processor
2 c. almonds, blanched, toasted and finely ground
1 t. almond extract
2 T. Splenda
Directions
Place cream, chocolate and butter in microwave safe bowl. Heat in 20 to 30 second intervals, stirring after each heating until cream is very hot (chocoate will continue to melt). After chocolate is completely melted and blended with the cream and butter, stir in raisins, 1 cup of the almonds, almond extract and Splenda. Mix well. Refrigerate or freeze until mixture is firm enough to roll into balls.
Form balls from teaspoon sized scoops of the truffle mixture. Roll in remaining ground alomonds. Keep chilled until about 30 minutes before serving time. Truffles should be served at room temperature.
Makes approx. 60
Note: A double boiler may be used to heat cream, butter and chocolate instead of microwave.
