Introduction

Ingredients

    1 cup uncooked brown rice
    1/2 cup uncooked lentils or small split peas
    1 can chickpeas (garbanzo beans), drained
    2 large carrots, diced
    2 small/medium red potatoes, diced
    1 cup diced onion
    1 Tbsp. ground coriander
    2 tsp. ground cumin
    1 tsp. ground cinnamon
    1/2 tsp. ground cloves
    1/4 tsp. ground cayenne pepper (or to taste)
    1 tsp. salt (to taste)
    1/4 tsp. pepper (to taste)
    Pinch of asafoetida (optional)

Directions

Combine all ingredients in rice cooker and add 3-1/2 cups water. Cook for about 45 minutes, or until water is gone (rice cooker will automatically shut off).


Serve topped with melted butter or ghee (not included in nutritional info) to bring out the flavor.


Makes 10 1-cup servings.
