Introduction

Ingredients

    1 1/4 cups skim milk
    1 1/2 cups wheat bran
    1/2 cup brown sugar - not packed
    1 1/2 cups whole wheat flour
    1 Tbsp baking powder
    1 can (8 oz) crushed pineapple packed in juice - undrained
    2 egg whites

Directions

Combine the milk, wheat bran, and brown sugar, let sit for 15 mins.

Combine the flour and baking powder and stir to mix well. Add the bran mixture, the pineapple with juice and the egg whites. Stir until the dry ingredients are moistened.

Coat muffin cups with non stick spray and fill about 3/4 full. Bake at 350 for abt 18 min.

Makes 18 muffins

    This recipe is the easiest thing since sliced bread!!! The pineapple is just perfect with the bran. I added a cup of blueberries as well and it was a delightful surprise!! Thank you for this yummy treat! - 1/3/20
