A quick and easy meal that packs protein and fiber! A quick and easy meal that packs protein and fiber!
Number of Servings: 4

Ingredients

    2 cup Black Beans
    1 cup Broccoli, chopped
    1/4 cup Onions, chopped
    1 tsp. Olive oil
    1-2 Tbsp. cumin
    1/4 cup water
    dash salt
    4 Corn tortillas (approximately 6-inch diameter)


Directions

Steam broccoli. Should still be crunchy.
Drain and rinse canned black beans.
Sautee onions in olive oil until translucent.
Add steamed broccoli, black beans, cumin, salt and water.
Cook down until just a little saucy.
Warm corn tortillas in a pan.
Fill them up with beans and broccoli mixture.
Add light sour cream and low fat cheddar cheese if desired.

    I made this for dinner yesterday and it was a hit! Served it on sun dried tomato taco shells and had also made lean hamburger w/taco seasoning. Served with light cheese. Family really enjoyed it. Great recipe for summer weather. - 7/21/09
