Ingredients

One can of Honey Bee Pink Salmon
    1 medium or large egg
    17-20 Saltine crackers, crushed
    1 small onion, chopped

Directions

Place salmon in bowl and remove bone and skin material. Mix with egg, onion, and crushed crackers. Form into patties. Cook in a skillet with a small amount of olive oil.

Note: If your croquets don't stick together well, try adding a little bit of cornmeal to the outside. I eat these with ketchup, but there are a wide variety of sauces that will work, including honey mustard.

    Very Good
This is one of my favorites from childhood! Goes really well (in my mind) with green beans and (not so healthy) mac & cheese. I also eat mine with ketchup. - 7/18/07

A little different than what I usually make--I've never added onions before! It sure puts a new spin on my old stand-by recipe. - 6/28/07
