Introduction

A healthy option for those of us who have put aside the Chip Dip! A healthy option for those of us who have put aside the Chip Dip!
Number of Servings: 10

Ingredients

    1 19 oz can Chickpeas, drained & rinsed
    Juice of 1 lemon
    Pulp of 1 whole Garlic bulb, roasted
    1/2 tsp cayenne pepper
    1 tsp ground Cumin
    1 tsp Paprika
    1/2 tsp Curry powder
    4 tbsp chopped fresh Cilantro
    1/3 cup Tahini
    2 tbsp Olive Oil

Directions

Preheat oven to 400 degrees.

Keeping skin on garlic bulb, carefully cut the top of the bulb in order to expose all of the individual cloves.

Place on tin foil and drizzel with 1/4 tsp of the Olive Oil. Wrap bulb up like a Hershey's Kiss and roast in oven for 30 min.

Meanwhile, drain and rinse Chickpeas well. Place in Cuisinart along with remaining ingredients. Once garlic has finished roasting, squeeze pulp in with other ingredients and whiz until well blended.

Feel free to add or reduce the amount of garlic and omit the cayenne pepper in order to personalize this recipe if you'd like

Serving size is 1/4 cup.
Goes great with whole wheat flat bread and raw veggies!

    All I can say is OMG!!!! This stuff is fantastic! I used to not like hummus (I always bought it in the store, you know)....well I just made this and I think I died and went to heaven! - 9/15/07

    Incredible!
    So good! I don't buy tahini, so I used natural peanut butter, and used garlic powder instead of roasted garlic. It is delicious with fresh veggies. I will definitely make this again. - 3/10/13

    This was delicious! I used 1/4 cup of lemon juice; 1/8 tsp cayenne pepper; one garlic clove and some garlic powder and I left out the cilantro. I blended the ingredients with my hand blender and it came out very smooth. I sprinkled paprika and olive oil on top when it was done. Very good and easy! - 4/23/11
