Ingredients

    4 medium (12 oz. total) boned skinless chicken breast halves
    1 8oz can peach slices in light syrup
    1 tsp cornstarch
    1/2 tsp grated ginger root or 1/8 tsp ground ginger
    1/4 tsp salt
    1/2 of 8 oz can (1/2 c.) of sliced water chestnuts, drained
    2 c. cooked rice
    1 6 oz pkg. frozen pea pods, cooked & drained

Directions

Spray large skillet with nonstick spray & preheat over medium heat. Add chicken and cook 8-10 minutes or til tender & no longer pink, turn to brown evenly. Remove from skillet & keep warm.
Drain peaches, reserve juice, - add water to juice to equal half cup. Stir in cornstarch ginger root & salt. Add to skillet , cook & stir til thickened & bubbly. Cook & stir 1 minute more. Gently stir in peaches & water chestnuts, heat through.
On serving platter or 4 individual plates arrange rice, pea pods & chicken. Spoon sauce over chicken.
