    1 box Near East Origonal Couscous
    2 cups beef or chicken broth
    juice of 1 lemon
    1 bunch of scallions, chopped
    2 tbsp parsley, chopped
    salt and pepper
    olive oil


Bring the broth up to a boil. When boiling add the couscous, salt and pepper. Turn heat off, cover pot and let sit for 7-10 minutes. Remove lid add the scallions, lemon juice and parsley. Fluff couscous with a fork.

    (this was incredibly simple and really tasty. i didn't have any scallions so i omitted that ingredient. i also used dried parsley instead of fresh parsley.) - 3/23/08
