Introduction

This is a great, low fat vegetarian recipe for crustless quiche. Different veggies can be added or removed. This is a great, low fat vegetarian recipe for crustless quiche. Different veggies can be added or removed.

Ingredients

    12 eggs-large
    1/2 cup milk
    1/2 cup mushrooms
    1/2 cup fresh tomatoes
    12 asparagus spears
    1/2 cup spinach
    1/4 cup onion
    1/2 tbsp cayenne pepper
    1/2 tbsp black pepper
    1/2 tbsp garlic salt
    1 cup cheddar cheese reduced fat

Directions

Makes 6-8 servings
Steam all veggies but tomatoes in steamer or rice cooker until tender.
Pre-heat oven to 350F
Mix 12 eggs and 1/2 cup milk in blender or with electric mixer for 1-3 minutes
Spray 9x13 casserole dish or baking dish with non stick spray (no fat)
Combine all ingredients in casserole dish and bake for 45 minutes or until knife comes out clean when inserted.
