Introduction

My family loves chicken Parmesan but we don't like substituting fat for flavor.

This is a quick recipe full of flavor, healthy for you and easy on the waste line.

You can substitute the Arrabbiata sauce for homemade or another jar. But I always use the all natural pasta sauces at the store. They're more expensive but they are lower in calorie, have no added sugar or chemicals and are the closest thing to homemade.

Francis Coppolo sauce is only 65 calories for a 1/2 C.

Another variation is to toss pasta with 3 Tbs olive oil, garlic and basil.

Ingredients

    1/4 C Italian bread crumbs
    1/4 C rolled oats
    2 Tbs fresh basil, finely chopped
    1/2 Tbs fresh pepper
    1 tsp salt
    6 oz mozzarella cheese, part skim
    6 - 3oz servings of boneless, skinless chicken breasts
    3 C Francis Coppola Arrabbiata pasta sauce (or the like)
    4 oz Barilla Plus, thin spagetti

Directions

1. Add oats to blender or food processor and grind to flour consistancy

2. Combine oats, bread crumbs, pepper, salt & basil in bag or plate.

3. Coat chicken breasts completely with oat mixture and place in preheated skillet with olive oil. Cook chicken thoroughly.

4. Cook pasta to box direction.

5. Remove chicken from skillet and place on cookie sheet or baking dish. Cover each breast with 1/4 C pasta sauce and top w/ 1/8th Cup mozzarella. Bake in oven for 15 minutes or until heated through and through, cheese is melted.

6. In small sauce pan heat sauce.

7. On plate add 1 oz pasta. Top with 1/4 C pasta sauce and chicken breast.
