Introduction

Adapted from a recipe in Eating Well magazine-- I reduced sugar, added some nuts, and simplified the process by making squares.

The next time I test this out I will likely further reduce the sugar b/c even these were too sweet.

Ingredients

    2 c. rice krispy cereal
    1/4 c. butter, unsalted
    3/4 c. sugar
    8 oz. dates, diced
    1/4 c. chopped almonds
    1/2 c. chopped, sweetened coconut
    1 tsp. vanilla
    1/8 tsp. salt

Directions

Melt butter, sugar and dates together until they form a paste over low heat-- about 15 min or so.

Stir in coconut, almonds, vanilla and salt. Then stir in the cereal.

Spread into a pan sprayed w/ cooking spray & slice when cool.
