Introduction

Ingredients

    .5 tbsp basil
    .5 tbsp oregano
    .25 tsp cinnamon
    1 tsp salt
    1 tsp pepper
    3 tsp sugar
    2 tbs olive oil
    1 tsp red wine vinegar
    1 tsp capers
    1 medium onion diced
    1 clove garlic diced
    2 cans of petite diced tomatoes
    6 chicken breasts

Directions

In a pan heat 1 tbsp of the oilive oil. Season the chicken breasts on both sides with extra salt and pepper (the amount called for above is for the sauce). Lightly brown the chicken breasts on both sides and then set aside on a plate for later.

Add the remaining tbsp of oilive oil and heat your pan. Add the diced onion and garlic and cook until softened. Then add the spices from above (basil, oregano, cinnamon, salt and pepper). Cook a few minutes more then add the tomatoes, vinegar, sugar, and capers. Bring this mixture to a simmer then add the chicken breasts back to the pan. Cover and simmer for 10 minutes, or until the chicken is cooked through.
