Introduction
These are a delicious and affordable way to enjoy cheese cake in small amounts. You can top the individual tarts with pie filling of your choice but you will need to add appropriate calories. Ingredients

1-8 oz package of Cream cheese (regular)
1-8 oz package of Fat Free cream cheese
1 cup Splenda sweetener
1 tsp vanilla extract
2 eggs
12 Vanilla Wafers
12 paper liners for muffin cups
Directions
Preheat oven to 350 degrees F. Place a paper cupcake liner in each cup of a muffin pan.
Beat cream cheese with a hand held electric mixer until fluffy. Add Splenda sugar substitute and vanilla and beat well. Add eggs, one at a time, beating well after each addition
Place vanilla wafer, flat side down, in each muffin cup. Spoon cream cheese mixture over each vanilla wafer.
Bake for 20 minutes. Allow to cool completely. Serve as is or add your favorite pie filling, ie., blueberry, cherry, peach, etc. Remember to add the calories of the pie filling if you chose to use it.

I too am going to use the Neufchatel to keep the sodium down a bit, it adds 10 calories but that is ok. But I will also try your recipe as is.
You can sprinkle cinnamon sugar on the tops for taste and looks - we do that all the time on regular cheesecake. Yum. - 4/14/09
