This is a great way to lighten up your pasta dish, and to add more veggies into your day. Might be a good way to "sell" those veggies to your pasta-loving kids, too. Ingredients

* Carrots, raw, 2 large (7-1/4" to 8-1/2" long)
* Zucchini, 1 (7-1/4" to 8-1/2" long)
* Tagliatelle, whole wheat (dry), 4 oz
Directions
With a potato peeler, "peel" the carrots and the zucchini into long strips, resembling the actual tagliatelle, about 1/3" to 1/2" wide. This may seem like a lot of work for such a plain pasta dish, but the effect is totally worth it.
Cook the "real" tagliatelle according to instructions. About 3-4 minutes before they are done, throw in the "veggie tagliatelle". When they are done, drain and serve with pasta sauce of your choice.
I think they are awesome with Bolognese Sauce, but that wouldn't be vegan of course.
