Ingredients

    1/4 cup honey
    1/4 cup low salt soy sauce
    1 clove garlic, crushed
    1 tsp olive oil
    8 chicken tenderloins
    3 Tbs lite mayonaise
    1 tsp finely grated lemon zest
    2 tsp lemon or lime juice
    4 pieces lavash bread (wholemeal)
    1 sm butter lettuce
    2 baby carrots, cut in matchsticks
    1 sweet red bell pepper cut in matchsticks


Directions

In bowl, combine the soy sauce, honey and garlic.
Add chicken and turn to coat. Cover dish and leave to marinate overnight in fridge, turning a couple of times.
The next day, heat a non stick frying pan, add oil.
Add half chicken and cook 3 min each side or until cooked through. Repeat with the rest of the chicken.
In a small bowl combine mayonaqise, lemon rind and juice
Place lavash bread flat on surface, on one side of each piece pile lettuce, carrot, bell pepper , mayonaise and chicken.
Roll up each lavash bread tightly to enclose filling.
Serves 4
