This is a great, economical way to get the most out of your meat. Buy lean meat and bulk it up with beans.

Number of Servings: 10

Ingredients

    * 400g lean beef steak mince (approx 5% fat)
    * Onion, 1 large, chopped
    * Canned Chopped Tomatoes, 400 grams
    * fajita seasoning homemade,
    I use 5 servings of PROFESSORWEST's http://recipes.sparkpeople.com/recipe-detail.asp?recipe=629035 or alternatively one shop-bought packet will work.
    * Mixed beans, 800 grams (I use kidney beans, chickpeas and butter beans in even amounts)

Directions

Fry off mince and onion in non-stick pan.
Add the chopped tomatoes, beans and fajita mix.
Simmer or slow-cook for 30-60 minutes.

Serve with rice, torillas, salad or other.

Makes 10 servings approx 260 grams each.
