    1 lb lean ground beef or ground turkey
    1 med onion
    1 lg eggplant
    8 oz tomatoes, cut up
    1 lb mushrooms fresh or can
    1/4 cup fresh parsely or 2 tablespoons of dried
    1 clove minced garlic
    1/2 teaspoon oregano
    1/2 tsp rosemary
    1/4 teaspoon cinnamon
    salt & pepper
    2 eggs
    1 cup plain yogurt
    8 oz of neufchatel cheese cut up or better yet light cream cheese


In skillet cook beef and onion . drain of fat. stir in vegetables herbs and seasonings cook uncovered for 15 minutes. turn into rectangular dish. beat in blender or use electric mixer to blend eggs cheese yogurt and little salt pour over meat bake at 350 for 20 minutes serves 6-8 so freeze the rest
