Number of Servings: 20

Ingredients

    1 1/2 cup brown sugar
    1 cup cold water
    1 1/2 cup shortening or corn oil
    1 cup raisins
    1 tsp cinnamon
    1/2 tsp ground cloves
    1/2 tsp salt
    1/2 cup crushed nuts
    1 tsp baking soda
    1 tsp baking powder
    1 3/4 cup sifted flour

    Frosting:

    8 oz cream cheese (softened at room temperature)
    2 cups powdered sugar
    1 stick melted butter
    1 tsp vanilla extract

Directions

Mix sugar, shortening, water, raisins, spices, and nuts in sauce pan and
bring to a boil for seven minutes. COOL

Stir baking soda into 4 tbsp (1/4 cup) warm water and add to mixture. Mix
in flour and baking powder. Beat well. Pour into greased 9" x 13" cake pan
(or two smaller pans). Bake for thirty minutes at 375 degrees F.

Frosting:

Mix together and spread over cooled cake.

    It would be easy to make this vegan by using Tofutti cream cheese.
