Sweet, spicy and crunchy salad perfect for summer. Sweet, spicy and crunchy salad perfect for summer.
Number of Servings: 8


    1 cored pineapple, chopped, or 1 can cut pineapple in natural juice (reserve 1/4 cup of the juice of either one you use)
    1 large green, red or yellow bell pepper, chopped
    1/2 red onion, chopped
    1/2 seedless cucumber, chopped
    2 ribs celery, chopped
    1 tomato, chopped
    juice of one lime
    1 teaspoon chili powder
    1/3 cup extra virgin olive oil
    salt and pepper
    hot sauce (like Tobasco Sauce) to your taste


Combine pineapple, peppers, onions, cucumber, celery and tomatoes. In a small bowl, combine pineapple juice, with lime juice and chili powder then whisk in olive oil and season the dressing with salt and pepper to taste. Add in a few dashes of hot sauce if you like. Pour dressing over salad and toss.
