Ingredients

Cooking time: 5-7 minutes
Yield:6 servings(1 serving equals 1 carb choice)
10-ounce package frozen whole kernel corn
1/2 cup chopped celery
1 teaspoon powdered chicken bouillon
1/3 cup water
1/4 cup can sliced mushroom rained
1 or 2 medium tomatoes
salt and pepper to taste
splash of balsamic vinegar(optional)
Directions
1: in a sauce pan, combine the corn, celery, bouillon, and 1/3 cup water. Bring to a boil. Cover and simmer until vegetables are tender, about 5-7 minutes
2: Stir in the mushroom and diced tomatoes; heat through. Season to taste with salt and pepper. Add a splash of balsamic vinegar if desired
