Introduction

This is great for lunch at work. Doesn't need to be heated up and can be prepared the day before. This is great for lunch at work. Doesn't need to be heated up and can be prepared the day before.

Ingredients

    1/2 cup cooked cauliflower
    1 spring onion (green onion/stick onion)
    100 g brisket corned beef
    1 tablespoon oil
    1 tablespoon lemon juice
    2 tablespoons fresh parsley
    salt & pepper to taste

Directions

Cook the cauliflower, drain and let cool off. In the meantime, chop the spring onion and the parsley. Cube the beef. Cut cauliflower in small pieces (rosetts).
Add beef, cauliflower and green onion in a bowl.
Mix oil and lemon juce, poore over cauliflower & beef mix. Add salt and pepper to taste and mix very well.
